Night Cap Recipe

Zen Penicillin

Ingredients

  • 50ml Nightcap

  • 20ml lemon

  • 10ml fresh ginger syrup*

  • 10ml smoky ginger honey**

*Fresh ginger syrup:

  • 200g ginger

  • 50g water

Blend until a pulp and squeeze through a tea towel until no juice remains. Weigh this liquid and add an equal weight of white sugar.

**Smoky ginger honey:

  • 200g set honey

  • 200g water

  • 100g peeled and diced ginger

Bring to a boil, cover and very gently simmer for 10 minutes. Leave to cool to room temperature and add 50ml heavily peated whisky. Strain out ginger.

HOW

Combine ingredients in an ice-filled cocktail shaker or jam jar. Shake hard and strain into an ice-filled whisky tumbler.
